What should I look for in a Macbook?

I was in your same place last year, and I went with the base model laptop my school offered, 2.0 ghz, 2 gb RAM, and it works great for everything I need to do school-wise. Now, I got a Dell and not a Macbook, but specs are similar so I can tell you that you honestly will not NEED anything faster or with more RAM. But I myself was not/am not a gamer, but I have found myself with a group of friends that like to game occasionally so I will join in, and often wish I had those slight upgrades. I think you should go for the RAM upgrade just because that will be more useful to you in the future when bigger better applications come out, also if you end up doing anything like video editing for projects it will help you out. The faster processor isn't really necessary though so I'd say don't worry about that.
