What is a good project car?

not like an old car needing to be restored, but a somewhat newer sports car (likei plan 2 find 1 that needs work ie. rebuilt motor, body mods, ect). i really want a mistu 3000 gt, but insurance is crazy, and there kinda expensive seeing there so hard to find. but what are some other cars that are good project cars. i was also thinking of an older eclipse or probe. any other ideas??? thx
